  • 4 pieces boneless, skinless chicken thighs can substitute with breast or even tofu for a vegetarian option
  • 1 tablespoon olive oil
  • 1 medium onion, diced or use shallots for a sweeter flavor
  • 3 cloves garlic, minced
  • 2 cups chicken broth vegetable broth works too for a lighter option
  • 1 cup diced tomatoes fresh or canned
  • 1 cup green beans or peas frozen varieties are great in a pinch
  • 1 teaspoon dried thyme or fresh if available!
  • to taste Salt and pepper
  • Fresh parsley, chopped for garnishing

  • In a large pot, heat olive oil over medium heat until shimmering.
  • Season the chicken thighs with salt and pepper. Add them to the pot and brown on both sides for about 5 minutes.
  • Remove the chicken and set aside. In the same pot, add diced onion and sauté until softened, about 3 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Pour in the chicken broth and diced tomatoes, stirring to combine. Bring the mixture to a gentle simmer.
  • Return the chicken to the pot. Add in green beans and thyme, letting everything bubble away for about 20 minutes until the chicken is fully cooked.
  • Garnish with fresh parsley before serving.

Notes

For a zestier kick, squeeze in some lemon juice just before serving. Experiment by adding other vegetables like bell peppers or carrots based on what's in your fridge. Got leftovers? Store in an airtight container in the fridge for up to three days. Freeze portions for later, allowing to cool before freezing.
