  • 1.5 pounds ground beef (or half beef and half turkey for a lighter loaf)
  • 1 cup breadcrumbs (or rolled oats for gluten-free)
  • 1 large egg helps everything set into a sliceable loaf
  • 0.5 cup milk (dairy or plant-based, keeps the meatloaf moist)
  • 1 small onion, finely chopped sweats down to sweet, savory bliss
  • 2 cloves garlic, minced for warm aromatic depth
  • 0.25 cup ketchup plus extra for glazing
  • 1 tablespoon Worcestershire sauce umami superstar
  • 1 teaspoon dried thyme (or 1 tablespoon fresh, chopped)
  • Salt and pepper to taste essential seasoning

Preparation

  • Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment for easy removal.
  • In a large bowl, combine breadcrumbs and milk and let them sit for a minute.
  • Add ground beef, egg, chopped onion, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix gently until just combined.
  • Shape the mixture into a loaf and place it in the prepared pan. Spread 1/4 cup of ketchup over the top.

Cooking

  • Bake for 50 to 60 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the loaf rest for 10 minutes before slicing.

Notes

Leftovers can be refrigerated for up to 4 days. Freeze tightly wrapped for up to 3 months. Make-ahead by mixing and shaping the loaf and refrigerating for up to 24 hours before baking.
