  • 2 medium russet potatoes Tender, creamy potatoes are key; sweet potatoes can add a delightful twist.
  • 1 cup cooked bacon, chopped Crispy bacon lends a savory crunch; turkey bacon is a lighter option.
  • 1 cup shredded cheddar cheese Go for your favorite cheese—mozzarella or pepper jack add unique flavors.
  • 1/2 cup green onions, sliced They provide a fresh crunch; substitute with chives for a milder taste.
  • to taste salt and pepper Essential for elevating all the flavors.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place your pie crust in a 9-inch pie dish, pressing it firmly against the sides. You can lightly prick the bottom with a fork to prevent bubbling.
  • Peel and cube the russet potatoes. Boil them in a pot of salted water until fork-tender (about 10 minutes). Drain and set aside to cool slightly.
  • In a mixing bowl, combine the eggs, milk, and a pinch of salt and pepper. Whisk until blended.

Combining Fillings and Baking

  • In a separate bowl, mix the potatoes, cooked bacon, cheese, and green onions. Gently fold the potato mixture into the egg mixture until combined.
  • Carefully pour the filling into the prepared crust, making sure it is evenly distributed.
  • Place the quiche in the preheated oven and bake for 20 minutes, or until the top is golden and slightly puffed.
  • Let it cool for a few minutes before slicing.

Notes

Leftover quiche can be stored in an airtight container in the fridge for up to 3 days. To reheat, warm individual slices in the microwave or oven. Healthier swaps and flavor variations can be made to suit your taste.
