Preparation

  • Preheat your oven to 425°F (220°C). The high temperature helps create beautifully crispy skin.
  • Rinse the chicken under cold water and pat it dry with paper towels. Place it in a roasting pan.
  • In a small bowl, mix olive oil, minced garlic, juice of one lemon, salt, pepper, and rosemary. This will infuse your chicken with flavor.
  • Rub the marinade all over the chicken, ensuring to gently lift the skin and massage some mixture directly onto the meat.
  • Place lemon slices inside the cavity of the chicken to add flavor and moisture while roasting.

Cooking

  • Insert the chicken into the preheated oven and roast for 45-60 minutes, until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  • Once cooked, allow the chicken to rest for about 10-15 minutes before carving. Garnish with fresh parsley if desired.

Notes

Store leftover chicken in an airtight container for up to 3 days. For longer storage, freeze in individual portions for up to 3 months. Reheat in a 350°F (175°C) oven until warmed through.
