  • 4 cloves garlic Roasted or boiled for flavor.

Preparation

  • Peel the Yukon Gold potatoes and cut them into uniform chunks.
  • If roasting the garlic, wrap the cloves in aluminum foil with a drizzle of olive oil and roast at 400°F (200°C) for about 20 minutes.
  • If boiling, add the garlic cloves to the pot of boiling water along with the potatoes.

Cooking

  • Place the cut potatoes in a large pot, cover with salted cold water, and bring to a boil.
  • Cook the potatoes until fork-tender, about 15-20 minutes.
  • Once done, drain the potatoes and the garlic (if boiled). Return them to the pot for mashing.

Final Steps

  • Add the unsalted butter and pour in the milk while mashing until you reach a smooth texture.
  • Season with salt and pepper, and mix in the roasted garlic until well incorporated.
  • Transfer to a serving bowl and garnish with fresh chives or parsley.

Notes

Allow mashed potatoes to rest for a few minutes before serving. Warm your milk before adding to keep the mixture fluffy. Taste as you go for perfect seasoning. You can mix in other potatoes like Russets for different textures. These can be stored in an airtight container for up to three days or frozen for up to three months.
