Main Ingredients

  • 1 pound thinly sliced roast beef (deli-style or leftover roast) Tender and ready to reheat.
  • 12 small slider rolls or dinner rolls Soft centers that soak up jus.
  • 8 slices provolone or Swiss cheese Melts gorgeously; use plant-based for dairy-free.
  • 2 cups low-sodium beef broth The base of your au jus; homemade or store-bought.
  • 1 tablespoon Worcestershire sauce Deepens the savory notes.
  • 1 small onion, thinly sliced Caramelizes and adds sweetness.
  • 2 tablespoons butter For sautéing onions and brushing tops.
  • 1 teaspoon garlic powder Warm, subtle garlic flavor.
  • to taste Salt and freshly ground black pepper
  • 1 teaspoon soy sauce or tamari (optional) For umami boost.
  • 1 teaspoon Dijon mustard (optional) For tang.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking dish with foil for easy cleanup.
  • In a saucepan over medium heat, melt 1 tablespoon butter and add the sliced onion. Cook, stirring, until onions are soft and beginning to caramelize, about 6-8 minutes.
  • Add beef broth, Worcestershire sauce, garlic powder, and a pinch of salt and pepper to the pan. Bring to a gentle simmer, then reduce heat and keep warm.
  • Slice the slider rolls in half horizontally but keep them connected if possible for easy assembly. Place the bottom halves in the prepared baking dish.
  • Layer the roast beef evenly over the rolls, tucking slices so each slider is generous but not overloaded. Spoon a little warm au jus over the beef to moisten.
  • Top with cheese slices, then place the top halves of the rolls on each sandwich. Brush the tops with melted butter and sprinkle a little extra garlic powder if desired.
  • Cover with foil and bake for 10-12 minutes until the cheese is melted and the rolls are warmed through. For a crispier top, remove the foil for the last 2 minutes under the broiler—watch closely.
  • To serve, ladle warm au jus into small dipping bowls and let everyone pull apart sliders and dunk generously.

Notes

Use hoagie rolls for bigger sandwiches or Hawaiian rolls for a slightly sweet contrast. For a festive meal, add thinly sliced roasted red peppers and a swipe of horseradish mayo.
