Preparation

  • Place the chicken breasts in the bottom of your crock pot. Season lightly with salt and pepper.
  • Sprinkle the ranch seasoning, garlic powder, and onion powder evenly over the chicken.
  • Add cubed cream cheese around and on top of the chicken. Dot with spoonfuls of sour cream or Greek yogurt.

Cooking

  • Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is fork-tender and the cream cheese has melted into a silky sauce.
  • Remove the chicken to a cutting board, shred with two forks, and return it to the crock pot.
  • Stir in shredded cheddar and crumbled bacon, if using, until everything is glossy and combined.
  • Finish with sliced green onions and an extra crack of black pepper. Serve warm.

Notes

For a lighter option, use Greek yogurt instead of sour cream and add veggies. This dish can be made ahead and stored in the fridge for up to 4 days or frozen for 3 months.
