  • 1 cup shredded cheese (cheddar or Monterey Jack) This bubbly, cheesy goodness is essential for that pull-apart delight.
  • ½ cup ranch dressing A creamy base that brings everything together; consider Greek yogurt as a sub for a lighter version.
  • 4 large flour tortillas Soft and stretchy, perfect for holding all the delicious fillings.
  • to taste fresh cilantro, chopped Adds a fresh touch if you want to elevate the flavors.
  • as needed olive oil or cooking spray for frying Just a little to make those quesadillas golden brown.

Cooking

  • In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes.
  • While the bacon is cooking, combine the shredded chicken with ranch dressing in a bowl. Stir gently until the chicken is delectably coated in creamy goodness.
  • Once the bacon is crispy, remove it from the skillet, leaving the drippings behind. Add your chicken and ranch mixture to the skillet, stirring in the crispy bacon until everything is combined.
  • Lay one tortilla in the skillet over medium heat. Sprinkle half of the shredded cheese on one half of the tortilla. On top of the cheese, add a generous portion of the chicken-bacon-ranch mixture and then top with a little more cheese before folding the tortilla over.
  • Cook for about 3-4 minutes or until the bottom is golden brown and the cheese is starting to melt. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side until crispy and golden.
  • Remove from the skillet and let it cool for a minute before cutting it into wedges.

Notes

For lighter options, swap out the flour tortillas for whole-wheat or corn tortillas. Spice it up with jalapeños or cayenne pepper.
