  • 1 pound ground beef (80/20 or lean 90/10) Browns beautifully and keeps the nachos rich.
  • 1 packet taco seasoning Or 2 tablespoons of homemade taco mix.
  • 12 ounces shredded cheddar cheese Or a blend of cheddar and Monterey Jack.
  • 1 large bag sturdy tortilla chips Choose thick, round chips to hold the toppings.
  • 1 cup black beans, rinsed and drained Adds texture and a protein boost (optional).
  • 1 small red onion, finely diced Adds sweet-crisp brightness.
  • 2 Roma tomatoes, seeded and diced Juicy bursts that cut through the richness.
  • 1 jalapeno, thinly sliced Optional for a gentle heat.
  • 1/2 cup sliced black olives Optional for salty pops of flavor.
  • 1/2 cup corn kernels (fresh or thawed frozen) Sweet and colorful addition.
  • Fresh cilantro, chopped Bright finishing note.
  • Lime wedges, sour cream, and salsa for serving To lift and balance flavors.

Preparation

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with foil for easy cleanup. Arrange tortilla chips in a single layer across the sheet.
  • In a large skillet over medium-high heat, crumble in the ground beef. Cook until browned and starting to crisp at the edges, about 6–8 minutes. Drain excess fat if desired.

Cooking

  • Sprinkle in taco seasoning with a splash of water (about 1/4 cup) and simmer until the beef is glossy and fully coated, about 2 minutes.
  • Spoon seasoned beef evenly over the chips. Scatter black beans, corn, diced onion, and olives across the top.
  • Generously sprinkle shredded cheese over everything. The cheese should blanket the toppings and tuck into nooks of the chips.
  • Bake in the preheated oven for 6–8 minutes, just until the cheese is fully melted and bubbling at the edges.

Finishing Touches

  • Remove from oven and top with fresh tomatoes, jalapeno slices, cilantro, and a drizzle or dollop of sour cream. Serve immediately with lime wedges and salsa on the side.

Notes

For a healthier option, swap ground beef for turkey or plant-based crumbles. Serve cold beers or sparkling water for a casual vibe. Leftovers can be stored separately for up to 3 days.
