Ingredients

Main Ingredients

  • 1 cup granulated sugar for a glossy top and balanced sweetness.
  • 1/2 cup unsalted butter, melted for rich fudginess; use coconut oil for a dairy-free swap.
  • 2 large eggs, room temperature for structure; for vegan use 1/2 cup applesauce plus 1 tablespoon flaxseed meal mixed with 3 tablespoons water.
  • 1 teaspoon vanilla extract fresh and fragrant.
  • 1/3 cup unsweetened cocoa powder sifted for smooth batter; Dutch-processed for deeper chocolate flavor.
  • 1/2 cup all-purpose flour for a tender crumb; try 1/2 cup almond flour for a gluten-free option but expect a different texture.
  • 1/4 teaspoon salt balances the sweetness and brightens chocolate notes.
  • 1/4 teaspoon baking powder optional for a slightly cakier edge.
  • 1/2 cup chocolate chips or chopped dark chocolate optional for pockets of molten chocolate.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper.
  • In a medium bowl, whisk together the melted butter and sugar until glossy and slightly cool.
  • Add the eggs one at a time, whisking until smooth, then stir in the vanilla.
  • Sift in the cocoa powder, flour, salt, and baking powder. Fold gently until just combined; do not overmix.
  • Stir in the chocolate chips or chopped chocolate, saving a few to sprinkle on top.
  • Spread the batter evenly into the prepared pan. Smooth the top with a spatula and dot with the reserved chocolate pieces.

Baking

  • Bake for 25–30 minutes. Start checking at 22 minutes—insert a toothpick in the center; slightly sticky crumbs mean fudgy perfection.
  • Allow the brownies to cool in the pan for at least 15 minutes before slicing.
  • Serve warm or at room temperature.

Notes

For extra fudgy brownies, reduce the flour by 2 tablespoons and add an extra egg yolk. Make them nutty by folding in chopped walnuts or pecans. For a healthier option, replace half the sugar with mashed banana or applesauce and use whole wheat pastry flour.
