Ingredients

Crust and Filling

  • 1 pre-made pie crust (store-bought or homemade) Try using a whole wheat crust for more fiber.
  • 3-4 medium apples, peeled, cored, and thinly sliced (Granny Smith, Honeycrisp, or a mix) Try adding pears for a different flavor twist.
  • 1 tablespoon lemon juice Prevents browning and adds brightness.
  • 1/3 cup sugar Adjust to taste; use coconut sugar for a healthier alternative.
  • 1 teaspoon cinnamon Feel free to add a pinch of nutmeg for warmth.
  • 1 tablespoon cornstarch (or flour) Thickens juices for a perfect texture.
  • 1 large egg, beaten (for egg wash) For a dairy-free version, skip the egg wash or use almond milk instead.

Optional Additions

  • A sprinkle of sea salt For taste enhancement.
  • A dash of vanilla extract For added richness.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the sliced apples with lemon juice, sugar, cinnamon, cornstarch, and a pinch of salt. Set aside while you prepare the crust.
  • Roll out your pie crust on a floured surface to a 12-inch round.
  • Transfer the crust to a baking sheet lined with parchment paper.
  • Arrange the apple mixture in the center of the crust, leaving about a 2-inch border around the edges.
  • Fold the edges of the crust over the apples, creating pleats. Brush the crust with the beaten egg.

Baking

  • Bake in the preheated oven for 30-35 minutes, until the apples are tender and the crust is golden brown.
  • Let it cool slightly before slicing.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Leftovers can be stored in an airtight container for up to three days in the fridge.
