Wet Ingredients

  • 3/4 cup unsalted butter, softened browned butter works beautifully for extra warmth
  • 1 cup granulated sugar coconut sugar is a swap for a slightly healthier option
  • 1/2 cup light brown sugar, packed maple syrup can replace some for different sweetness notes
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract

Mix-ins

  • 1 1/2 cups chocolate chips or chunks mix dark and milk for depth; for a festive twist, use pastel candy-coated chocolates on top
  • 1/2 cup chopped toasted nuts (pecans or almonds) optional for crunch and contrast

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In a separate large bowl, beat the softened butter with granulated and brown sugars until creamy and fluffy.
  • Add eggs one at a time, then vanilla, scraping the bowl to combine.
  • Slowly add the dry ingredients to the wet mixture and fold until just combined.
  • Stir in chocolate chips and nuts.
  • Drop tablespoons of dough onto the prepared sheets, leaving space for spreading.
  • Press pastel candies on top of each dough ball before baking.

Baking

  • Bake for 10–12 minutes until edges are set but centers still look slightly soft.
  • Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

For chewier cookies, swap half the butter for browned butter or add an extra egg yolk. Make them gluten-free by using a gluten-free flour blend. Add a teaspoon of instant espresso powder for deeper chocolate flavor.
