  • Cocoa powder For dusting the bonbons, offering a beautiful finish.

Preparation

  • Begin by finely chopping the dark chocolate and placing it in a heatproof bowl.
  • In a small saucepan, heat the heavy cream over medium heat until it’s just about to boil. Remove from heat and pour it over the chopped chocolate.
  • Allow the mixture to sit for a couple of minutes to soften the chocolate, then stir gently until smooth.
  • Add the butter to the mixture, stirring until it’s fully incorporated.
  • Sprinkle a pinch of sea salt into the chocolate mixture for a hint of flavor.
  • Transfer the mixture to a suitable bowl, cover it with plastic wrap, and let it chill in the fridge for about two hours.
  • Once the mixture is firm enough to handle, use a melon baller or your hands to scoop out small portions and roll them into balls.
  • Roll each ball in cocoa powder to coat.
  • For an extra layer of flavor, sprinkle a touch more sea salt on top of each bonbon.
  • Refrigerate the bonbons again for about 30 minutes before serving.

Notes

Store leftover bonbons in an airtight container in the refrigerator for up to a week. For longer storage, they can be frozen for up to three months. Thaw in the fridge before serving.
