  • 8 ounces Pasta (any type, preferably fettuccine) Whole wheat or gluten-free substitutes can be used.
  • 2 large Onions Yellow or red onions work well for caramelising.
  • 2 tablespoons Olive Oil Use good-quality extra virgin olive oil.
  • 3 cloves Garlic Fresh garlic is recommended; garlic powder can be a substitute.
  • 1 cup Parmesan Cheese, grated Omit for a vegan option or use nutritional yeast.
  • to taste Salt & Pepper Essential for seasoning.
  • to taste Fresh Herbs (like thyme or parsley) Optional for garnish.

Preparation

  • Slice the onions thinly. Heat 2 tablespoons of olive oil in a pan over medium heat.

Cooking

  • Stir the onions occasionally, cooking for about 15 minutes until they are deep golden brown and soft.
  • Finely mince 3 cloves of garlic and add them to the onions. Sauté for another 2 minutes until fragrant.
  • Boil a pot of salted water and cook the pasta according to package instructions until al dente.
  • Drain the pasta, reserving a cup of pasta water. Add the hot pasta to the pan with the onions and garlic.
  • Toss everything together, adding a splash of the reserved pasta water until you reach a creamy consistency.
  • Grate a generous handful of Parmesan cheese over the pasta and stir until melted.
  • Season with salt and pepper to taste. Chop fresh herbs and sprinkle over the pasta before serving.

Notes

Optional additions include vegetables like spinach or protein sources like grilled chicken. For a festive touch, add nuts on top.
