  • 2 tablespoons fresh lemon juice Adds lift and freshness.

Preparation

  • Shred the carrots: Peel and shred the carrots into a large mixing bowl. You want even, coarse shreds so they hold dressing and remain pleasantly crunchy.
  • Toast the seeds: In a small dry skillet over medium heat, toast the sunflower seeds for 2–3 minutes, shaking the pan until they smell nutty. Watch closely so they do not burn.
  • Make the dressing: In a small bowl, whisk together mayonnaise, sour cream (or yogurt), apple cider vinegar, honey, lemon juice, salt, and pepper until smooth. Taste and adjust sweetness or acidity as desired.
  • Combine gently: Pour the dressing over the shredded carrots and fold gently until every shred is coated.
  • Add crunch: Fold in toasted sunflower seeds and about half of the crispy fried onions. Reserve the rest to sprinkle on top just before serving.
  • Chill and marry flavors: Refrigerate the salad for at least 15 minutes.
  • Serve with flourish: Right before serving, toss with chopped herbs and the remaining crispy onions.

Notes

For lighter option, use all Greek yogurt and skip the fried onions. To make it vegan, substitute mayonnaise and sour cream with plant-based alternatives. Store in an airtight container for up to 3 days.
