  • 2 pounds Beef chuck roast or stew meat Cut into large chunks
  • 4 cups Low sodium beef broth Choose low sodium to control salt levels
  • 1/4 cup Soy sauce
  • 2 tablespoons Brown sugar Adds sweetness to balance flavors
  • 4 cloves Garlic Minced, fresh or from a jar
  • 1 tablespoon Ginger Grated, fresh or from a jar
  • 8 ounces Ramen noodles Discard seasoning packet

Optional toppings

  • 1/2 cup Sliced green onions
  • 4 pieces Soft boiled eggs Optional, for extra protein
  • 2 cups Spinach Fresh or frozen, to add nutrients
  • 1 cup Mushrooms Sliced, for added texture and flavor

Instructions
 

Preparation

  • Put beef, broth, soy sauce, garlic, ginger, and brown sugar into the crockpot.
  • Cook on low for 7 to 8 hours or high for 4 to 5 hours until the beef shreds easily.

Final touches

  • Shred the beef right in the pot.
  • Add ramen noodles for the last 8 to 10 minutes. Stir gently to prevent clumping.
  • Top each bowl with any preferred toppings such as green onions, soft boiled eggs, spinach, or mushrooms.
