  • 2 pounds Boneless, skinless chicken breasts
  • 2 medium Carrots, chopped
  • 2 medium Potatoes, diced
  • 2 stalks Celery, sliced
  • 1 cup Corn, frozen or fresh
  • 2 cups Chicken broth
  • 1 can Cream of chicken soup
  • 2 crusts Frozen pie crusts

Preparation

  • Prepare the chicken by trimming any excess fat and cutting into bite-sized pieces.
  • Chop the carrots, potatoes, celery, and other desired vegetables.

Cooking

  • Combine the chicken, chopped vegetables, chicken broth, and cream of chicken soup in the crock pot.
  • Stir well, cover, and set the crock pot to low.
  • After 6 hours, check if the chicken is cooked through and tender. Shred the chicken for a fluffier texture.
  • 30 minutes before serving, place the frozen pie crust on top and allowing it to bake slightly until golden and flaky.
  • Serve hot and enjoy.

Notes

For a healthier twist, consider using whole wheat pie crusts or adding herbs and spices. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
