Preparation

  • Bring a pot of salted water to a boil. Add the chopped cauliflower and cook for about 10-12 minutes, or until fork-tender.
  • Drain the cauliflower and return it to the pot. Allow it to steam for 2-3 minutes to remove excess moisture.
  • In a food processor, combine the drained cauliflower, crumbled feta, cream cheese, minced garlic, and olive oil. Blend until smooth and creamy, scraping down the sides as needed.
  • Add salt and pepper to taste, and blend again to incorporate. Squeeze in lemon juice if desired.
  • Taste your mash, adjust seasonings if necessary, then serve warm.
