  • 1/2 cup Sun-Dried Tomatoes, chopped Adds burst of flavor.
  • 2 cups Fresh Spinach To balance the richness.
  • 1 teaspoon Italian Seasoning Brings a taste of Tuscany.

Instructions
 

Preparation

  • Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  • In a skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, until browned and cooked through. Remove and set aside.

Cooking

  • In the same skillet, add a bit more olive oil if necessary, then toss in the minced garlic. Sauté for about 30 seconds.
  • Pour in the heavy cream, stirring to combine, and allow it to simmer for a minute. Add the grated Parmesan cheese, stirring until melted and creamy.
  • Stir in the chopped sun-dried tomatoes and fresh spinach. Let it cook just until the spinach wilts.
  • Return the chicken to the skillet, spooning the creamy sauce over each piece. Let everything mingle for a minute on low heat.

Serving

  • Garnish with extra Parmesan, and perhaps a sprinkle of fresh parsley, before serving.

Notes

For added spice, sprinkle in some red pepper flakes while cooking the garlic. Can swap chicken for sautéed mushrooms or zucchini for a vegetarian option.
