Preparation

  • In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  • In a large skillet over medium heat, heat the olive oil. Once shimmering, add the shrimp. Season with salt and pepper, and cook for about 2-3 minutes on each side, until pink and opaque. Remove from the skillet and set aside.

Making the Sauce

  • In the same skillet, add the minced garlic to the remaining oil and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring it to a gentle simmer, letting it thicken for about 3 minutes.
  • Gradually stir in the grated Parmesan cheese, allowing it to melt into a rich, creamy sauce. If the sauce gets too thick, add some of the reserved pasta water until it reaches the desired consistency.

Finishing Touches

  • Add the cooked fettuccine and shrimp back into the skillet. Toss everything together until the fettuccine is coated in the creamy sauce. Sprinkle with fresh parsley before serving.
