  • 1 medium onion Chopped.
  • 3 cloves garlic Minced.
  • 2 medium carrots Chopped.
  • 2 stalks celery Chopped.
  • 4 cups chicken broth Or veggie broth for a lighter option.
  • 1 cup heavy cream For creaminess.
  • 1 cup Parmesan cheese Freshly grated.
  • 2 cups spinach or kale For added nutrition.

Preparation

  • In a large pot over medium heat, add a splash of olive oil and the Italian sausage. Cook until browned, breaking it up with a wooden spoon.
  • Add the chopped onion, garlic, carrots, and celery. Cook for about 5 minutes, letting the veggies soften.
  • Pour in the chicken broth, scraping the bottom of the pot to capture all the flavorful bits. Bring to a simmer.
  • Stir in the heavy cream and bring the soup back to a gentle boil.
  • Add in the spinach (or kale) and Parmesan cheese, stirring until the greens wilt and the cheese melts.
  • Taste for seasoning and adjust with salt and pepper before serving warm.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Freeze portions for quick lunches later. Reheat by adding a splash of broth if necessary.
