  • 2 cups mushrooms, sliced (any variety) Adds earthiness; cremini is recommended for depth.
  • 3 cloves fresh garlic, minced For that aromatic boost.
  • 1 cup chicken broth Homemade for the most flavor, but store-bought works too.
  • 1 cup heavy cream or Greek yogurt Creamy indulgence or a healthier twist.
  • 1 teaspoon fresh thyme (or ½ teaspoon dried) A fragrant herb that brightens the dish.
  • Salt and pepper, to taste Essential for seasoning.

Preparation

  • Season the chicken breasts with salt and pepper. Allow them to rest for about 10 minutes for better flavor absorption.

Cooking Chicken

  • In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.

Sautéing Mushrooms

  • In the same skillet, add sliced mushrooms and sauté for about 5 minutes until they’re tender and golden. Scrape the brown bits from the bottom of the pan.

Adding Garlic

  • Stir in the minced garlic and cook for another minute until fragrant.

Creating Sauce

  • Pour in the chicken broth, scraping the bottom of the skillet to incorporate all those flavors. Let it simmer for 2-3 minutes.
  • Gradually stir in the heavy cream (or Greek yogurt) to create that luscious sauce. Let it thicken slightly for 3-4 minutes.

Finishing Touches

  • Return the chicken breasts to the pan, spooning the sauce over the top. Allow everything to simmer together for another 2-3 minutes to meld flavors.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat gently in a skillet over low heat, adding broth or water if needed to loosen.
