Preparation

  • Begin by peeling the potatoes and cutting them into chunks. Place them in a pot of salted water and bring to a boil.
  • In a separate pot, add sliced carrots, cover with water, and bring to a boil. Cook for about 10 minutes until tender, then drain and set aside.

Cooking Chicken and Sauce

  • In a large skillet, heat a bit of oil over medium heat. Season the chicken breasts with salt and pepper. Sear for about 5 minutes on each side, until golden brown.
  • Once the chicken is cooked, remove it from the pan. In the same skillet, add minced garlic and cook for a minute until fragrant. Pour in the chicken broth and heavy cream, scraping up any browned bits, then stir in the thyme. Let it simmer until slightly thickened.
  • Return the chicken to the skillet, coating them with the sauce. Simmer for another 5 minutes.
  • Drizzle honey over the drained carrots, mixing well and setting them over medium heat until warmed and glazed.

Finishing Touch

  • Once the potatoes are fork-tender, drain them and return them to the pot. Add butter, a splash of cream, and mash until smooth and creamy. Season with salt and pepper.

Notes

Feel free to swap chicken breasts for thighs for a richer flavor. Add a splash of white wine to the sauce for an extra layer of taste. For a healthier option, substitute cauliflower for potatoes.
