Ingredients
  

Pasta

  • 8 oz Pasta of your choice (linguine, fettuccine, spaghetti) Gluten-free options available.

Shrimp

  • 1 lb Fresh or frozen shrimp (peeled and deveined) Substitute with chicken or mushrooms for a non-seafood option.

Sauce Ingredients

  • 4 cloves Fresh garlic, minced Garlic powder can be used if fresh is not available.
  • 1 cup Heavy cream Greek yogurt can be used for a lighter version.
  • 3 tbsp Butter Olive oil can be used for a healthier alternative.
  • 0.5 cup Freshly grated Parmesan cheese For an extra flavor boost.
  • 2 cups Fresh or frozen spinach Adds color and nutrition.
  • to taste Salt and pepper Essential for seasoning.

Instructions
 

Preparation

  • In a large pot, bring salted water to a boil. Cook your pasta according to package instructions until al dente. Drain, reserving half a cup of the pasta water.
  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp, seasoning with salt and pepper. Cook for about 2-3 minutes on each side until pink and opaque. Remove and set aside.
  • In the same skillet, add another tablespoon of butter. As it melts, toss in the minced garlic, stirring until fragrant, about 30 seconds.

Cooking

  • Pour in the heavy cream, scraping any bits from the bottom of the skillet. Reduce the heat and simmer for about 2 minutes, letting it thicken slightly.
  • Add the drained pasta, shrimp, and spinach to the skillet. Toss to coat everything in the sauce. If too thick, add reserved pasta water to achieve desired creaminess.
  • Sprinkle generously with freshly grated Parmesan cheese. Stir until melted and blended. Taste and adjust seasoning if necessary.
  • Serve immediately, garnished with additional parmesan and cracked pepper if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month. Reheat with a splash of milk or cream to revive creaminess. Add red pepper flakes for spice or cherry tomatoes for color.
