Main Ingredients

  • 2 large chicken breasts or 4 small cutlets
  • 1-2 tablespoons olive oil or butter for cooking
  • 4-6 cloves garlic, minced
  • 1 cup chicken broth
  • 3/4 cup heavy cream or half and half
  • 1/3 cup grated Parmesan fresh grated is preferred
  • to taste salt and pepper
  • to taste Italian seasoning or dried parsley optional

Preparation

  • Slice the chicken breasts in half lengthwise for quicker cooking. Season both sides with salt and pepper.

Cooking

  • Heat oil or butter in a large skillet over medium heat. Add chicken and cook until golden and cooked through. Transfer to a plate.
  • In the same skillet, add minced garlic and stir for about 30 seconds until fragrant, but not burnt.
  • Pour in chicken broth while scraping up browned bits from the pan.
  • Reduce heat and add cream. Stir in Parmesan and seasoning. Let simmer for a few minutes until thickened.
  • Return chicken to the skillet, spoon sauce over the chicken, and warm together for another minute or two.
  • For a saucier dish, add a splash more chicken broth if desired.

Notes

This recipe is flexible; use chicken thighs or pre-cooked chicken if needed. Milks and alternative creams can be substituted with adjustments.
