Ingredients

Main Ingredients

  • 3 cups cooked chicken (shredded) Use rotisserie chicken for convenience.
  • 1 cup cream cheese (softened) Brings that creamy indulgence; swap with Greek yogurt for a lighter version.
  • 1 cup sour cream Adds tanginess; can be replaced with plain yogurt if desired.
  • 1 packet ranch seasoning mix For a burst of flavor; homemade ranch mix can be a great alternative.
  • 2 cups shredded cheddar cheese Choose sharp cheddar for a stronger taste.
  • 1 cup bacon bits (cooked) Adds crunch and smoky flavor; you can use turkey bacon for a healthier option.
  • 1 can cream of chicken soup Provides a rich base; feel free to use a homemade version for a healthier twist.
  • 1 cup frozen peas (optional) Adds a bit of color and nutrition; other veggies like corn could work well too.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) to prepare for baking.
  • In a large bowl, mix together the cooked chicken, cream cheese, sour cream, ranch seasoning mix, cream of chicken soup, and half of the cheddar cheese until smooth.
  • Gently fold in the bacon bits and frozen peas, if using.
  • Pour the mixture into a greased 9x13 inch baking dish and smooth the top.
  • Sprinkle the remaining cheddar cheese over the top.

Baking

  • Bake in the preheated oven for about 30 minutes or until the cheese is melted and the casserole is bubbly.
  • Allow the casserole to rest for 5-10 minutes before serving.

Notes

Consider healthy swaps like using Greek yogurt instead of sour cream. You can also incorporate seasonal veggies and add spices for extra flavor.
