  • 1 to 1.5 pounds chicken breast or thighs, cut into bite size pieces
  • salt and pepper to taste
  • 1 teaspoon Italian seasoning (or oregano)
  • 1 tablespoon oil or butter
  • 2 cups sliced mushrooms (optional) Optional but highly recommended
  • 2 to 3 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1/2 cup cream or half and half
  • Parmesan cheese, if available
  • spinach or peas (optional) Optional for added nutrition

Preparation

  • Season the chicken with salt, pepper, and Italian seasoning.

Cooking

  • Heat oil in a large pan and cook chicken until browned and cooked through. Remove from the pan and set aside.
  • In the same pan, cook mushrooms for a few minutes, then add garlic and cook for about 30 seconds.
  • Pour in the chicken broth and scrape any tasty bits off the bottom of the pan. Add cream and a little Parmesan.
  • Return chicken to the pan, add spinach if desired, and simmer for a couple of minutes until the sauce thickens.

Serving

  • Serve the creamy chicken mixture over pasta, rice, or toasted bread.
