  • 1/2 cup Parmesan cheese, grated Use nutritional yeast for a vegan option.

Vegetables and Seasoning

  • 2 cups Mixed vegetables Bell peppers, zucchini, and spinach recommended for flavor and nutrition.
  • 1 Medium onion, diced Adds sweetness to the dish.
  • 3 cloves Garlic, minced Essential for a robust flavor.
  • 2 tbsp Cajun seasoning Store-bought or homemade for authentic taste.
  • 2 tbsp Olive oil For sautéing the vegetables.
  • To taste Salt and pepper Always season to perfection.

Instructions
 

Preparation

  • In a large pot, bring salted water to a boil and cook your pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3 minutes.
  • Toss in the garlic, followed by your mixed vegetables. Sauté until tender, about 5-7 minutes.
  • Sprinkle in the Cajun seasoning, stirring well to combine.
  • Pour in the heavy cream and reserved pasta water. Stir to combine and allow it to simmer for 2-3 minutes, thickening slightly.
  • Add the cooked pasta to the skillet. Toss gently to coat, ensuring every strand is enveloped in the creamy sauce.
  • Mix in Parmesan cheese, allowing it to melt and incorporate beautifully.
  • Add salt and pepper as desired. For an extra pop of flavor, squeeze a little lemon juice before serving.

Notes

Optional protein additions include cooked chicken, shrimp, or chickpeas. Adapt seasonal veggies as desired, and add jalapeños or hot sauce for extra heat. For a healthier option, consider zucchini noodles or cauliflower pasta.
