Preparation

  • Start by seasoning the chicken breasts thoroughly with Cajun seasoning, salt, and pepper.

Cooking the Pasta

  • Bring a large pot of salted water to a boil, adding the spaghetti and cooking until al dente (usually 8-10 minutes). Remember to reserve a cup of pasta water for later.

Cooking the Chicken

  • In a large skillet, heat olive oil over medium heat. Add the seasoned chicken and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet, let it rest, and then slice it into strips.

Making the Sauce

  • In the same skillet, add minced garlic, and sauté until fragrant (about 30 seconds). Add the diced bell pepper and onion, cooking until softened.
  • Pour in the heavy cream and bring to a gentle simmer. Stir in the mozzarella cheese, letting it melt and create a creamy sauce. If the sauce is too thick, add a little reserved pasta water!

Combining Ingredients

  • Add the drained spaghetti and sliced chicken into the sauce, tossing until well combined. Sprinkle additional Cajun seasoning if desired.
