Ingredients

Pasta and Chicken

  • 8 oz Penne Pasta Any pasta shape works, but penne holds the sauce beautifully.
  • 1 lb Chicken Breast Boneless, skinless chicken helps save on preparation time.

Sauce Ingredients

  • 1 tbsp Cajun Seasoning Make your own or use store-bought.
  • 1 cup Heavy Cream Swap with coconut cream for a dairy-free option.
  • 1/2 cup Chicken Broth Vegetable broth works too for a vegetarian version.
  • 1/2 cup Parmesan Cheese Freshly grated for the best flavor.
  • 2 tbsp Olive Oil For cooking the chicken.
  • 2 cloves Garlic Minced, as garlic enhances flavor.
  • to taste Salt and Pepper Always start with less and add more.

Instructions

Preparation

  • Boil a large pot of salted water. Cook the penne according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Season the chicken breast with Cajun seasoning, salt, and pepper. Cook for about 6-7 minutes per side until the chicken is fully cooked and the edges are golden brown. Remove and let rest, then slice.

Making the Sauce

  • In the same skillet, add garlic and sauté until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  • Stir in the Parmesan cheese, allowing it to melt into the sauce. Continue to simmer for about 5 minutes until the sauce thickens slightly.

Combine and Serve

  • Add the cooked pasta and sliced chicken to the sauce, tossing to coat evenly. Let everything warm through.
  • Taste and adjust seasoning if necessary. Serve immediately, garnished with fresh herbs if desired.

Notes

For extra nutrition, add bell peppers, spinach, or sun-dried tomatoes. Adjust spice levels by adding red pepper flakes or jalapeños. For a lighter option, use a blend of Greek yogurt and chicken broth instead of heavy cream. Leftovers can be stored in an airtight container for up to 3 days or frozen for longer storage.
