  • 1 cup Chicken Broth Use low-sodium for a milder flavor; vegetable broth is a great vegetarian option.
  • 3 cloves Fresh Garlic, minced Don't skip it!
  • 2 tbsp Olive Oil Opt for extra virgin for a bold taste.
  • ¼ cup Parmesan Cheese, freshly grated Enhances the dish’s creaminess.
  • Salt and Pepper To taste.
  • Fresh Parsley For garnish, adds a burst of freshness.

Preparation

  • Cut the chicken breasts into bite-sized cubes and season lightly with salt and pepper.

Cooking

  • In a large skillet over medium heat, add olive oil.
  • Once hot, add the chicken pieces, cooking until golden brown (about 5-7 minutes).
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add in the banana peppers, mixing them gently with the chicken.
  • Lower the heat slightly, then add the cream cheese and chicken broth, stirring continuously until melted.
  • Stir in the grated Parmesan cheese until the sauce is creamy and smooth.
  • Let it simmer for a couple of minutes and adjust seasoning if necessary.
  • Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the dish for up to a month (leave out fresh herbs until ready to serve). Serve over rice, couscous, or pasta for a delightful twist.
