Pasta and Vegetables

  • 12 ounces rotini or bowtie pasta holds dressing beautifully
  • 1 cup cherry tomatoes, halved add freshness and color
  • 1/2 cup green onions, sliced gentle onion bite
  • 1/2 cup celery, finely diced for crisp texture

Dressing

  • 1 cup plain Greek yogurt creates creaminess with protein
  • 1/2 cup mayonnaise balances tang and silkiness
  • 2 tablespoons ranch seasoning mix or 3 tablespoons homemade ranch
  • 1 tablespoon apple cider vinegar brightens the dressing
  • 1 teaspoon Dijon mustard adds depth
  • Salt and fresh cracked pepper to taste

Main Ingredients

  • 8 slices thick-cut bacon crisped and chopped for smoky crunch
  • 1 1/2 cups sharp cheddar cheese, shredded for bright, tangy cheese flavor

Optional

  • 1/4 cup chopped pickles or a tablespoon of pickle juice for tang

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain and rinse under cold water to stop cooking and cool the pasta for salad.
  • While pasta cooks, fry the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate and chop when cool.
  • In a large bowl, whisk together Greek yogurt, mayonnaise, ranch seasoning, apple cider vinegar, Dijon mustard, salt, and pepper until smooth.
  • Add the cooled pasta, shredded cheddar, chopped bacon, cherry tomatoes, celery, and green onions to the dressing. Toss gently so each piece is coated in creamy goodness.

Chilling and Serving

  • Taste and adjust seasoning. Chill for at least 20 minutes to let flavors meld.
  • Serve with an extra sprinkle of cheddar and a few bacon crumbs on top for crunch and visual appeal.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. For make-ahead, prepare the salad a day in advance and keep a handful of bacon and cheddar aside to sprinkle just before serving.
