Preparation

  • Thinly slice the cucumbers and place them in a large mixing bowl. Add the shredded carrot and sliced green onions.
  • In a small bowl, whisk together Greek yogurt, tahini, toasted sesame oil, rice vinegar, soy sauce, honey, minced garlic, grated ginger, and red pepper flakes. The dressing should be smooth and slightly glossy.
  • Pour the dressing over the cucumbers and vegetables. Use tongs to gently toss until every slice glistens with creamy dressing.
  • Sprinkle chopped roasted peanuts and cilantro over the top for texture and bright herbaceous notes.
  • Taste and adjust the flavors—add more vinegar or soy sauce as needed.

Notes

For spiciness, stir in chili crisp or sriracha. To make it vegan, use coconut or almond yogurt and maple syrup. You can also add protein like grilled shrimp or crispy tofu for a heartier dish.
