  • 1 lb Italian sausage Preferably Italian or your favorite type
  • 4 cups kale Can substitute with spinach
  • 4 medium potatoes (Yukon gold or russet) Provides creaminess and heartiness
  • 1 medium onion, diced Offers sweetness and depth
  • 3 cloves garlic, minced Brings an aromatic kick
  • 6 cups chicken or vegetable broth The base of the soup
  • 2 medium carrots, sliced Adds a sweet crunch
  • to taste salt For seasoning
  • to taste pepper For seasoning
  • 1 tbsp olive oil Optional, for sautéing

Preparation

  • Start by dicing your onion, mincing garlic, and slicing the carrots and potatoes.

Cooking

  • Heat a splash of olive oil in a skillet over medium heat. Add the sausage, breaking it apart until browned and cooked through.
  • In your crockpot, combine the sautéed sausage, chopped kale, diced potatoes, sliced carrots, broth, and season with salt and pepper.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • When cooking time is up, give the soup a stir, taste, and adjust seasoning if needed. Serve hot.

Notes

For a creamier soup, add a splash of heavy cream or half-and-half in the last 30 minutes. To spice it up, add red pepper flakes. This soup can be made gluten-free by using gluten-free sausage and broth.
