Main Ingredients

  • 1 pound Italian sausage spicy or mild, chicken sausage is a lighter option
  • 4 cups kale, chopped can substitute with Swiss chard or spinach
  • 4 medium potatoes, diced Russets or Yukon golds work; sweet potatoes can also be used
  • 1 each onion, diced shallots or leeks can be used for a sweeter flavor
  • 2 cloves garlic, minced add more if you like garlic
  • 4 cups vegetable or chicken broth homemade or store-bought

Seasoning

  • Salt and pepper to taste add red pepper flakes for heat if desired

Preparation

  • In a skillet over medium heat, brown the Italian sausage until it’s rich and golden, about 5-7 minutes. Drain any excess fat.
  • In your crockpot, add the browned sausage, chopped kale, diced potatoes, onion, garlic, and broth.
  • Sprinkle in salt, pepper, and any additional spices you love. Perhaps a dash of thyme or rosemary for an extra layer of flavor?

Cooking

  • Cover and set your crockpot to low for 6-8 hours or high for 4 hours.
  • Taste and adjust any seasonings if needed. Ladle the warm soup into bowls and enjoy.

Notes

This soup can be easily modified with extra vegetables like carrots or celery. Add heavy cream for a richer base, or use fresh herbs for enhanced flavor. Leftovers keep well and can be frozen for future meals.
