  • 2 cloves garlic, minced Fresh garlic is best, but jarred works in a pinch.
  • 2 cups chicken broth Vegetable broth makes it vegetarian-friendly.
  • 1 teaspoon cajun seasoning Store-bought is fine, or you can make your own.
  • Salt and pepper To taste, essential for enhancing flavors.
  • 1 tablespoon olive oil Can substitute with avocado oil.

Optional Garnish

  • green onions, sliced For garnish and a fresh finish.

Preparation

  • In a large pot or skillet, heat the olive oil over medium heat.
  • Add the diced onion and bell pepper, cooking until they soften and become fragrant—about 5 minutes.
  • Stir in the minced garlic and sauté for another minute until golden and aromatic.
  • Pour the rice into the pot, along with the chicken broth, cajun seasoning, salt, and pepper. Stir well to combine.

Cooking

  • Increase the heat to bring the mixture to a boil, then reduce to a simmer.
  • Cover the pot and cook for about 18-20 minutes, or until the rice is tender and has absorbed all the liquid.
  • Remove from heat and let it sit for 5 minutes, then fluff the rice with a fork.
  • Garnish with green onions if desired.

Notes

This dish stores well and can be made ahead! It lasts up to 5 days in the fridge. Add cooked sausage or shrimp for a protein boost, and adjust the spice level to your preference.
