Ingredients

Main ingredients

  • 4 ripe peaches Look for those that yield slightly to pressure; they should be sweet and fragrant.
  • 1/4 cup brown sugar This adds a rich depth of flavor; feel free to use coconut sugar for a lighter option.
  • 1 teaspoon ground cinnamon This warming spice elevates the dish – nutmeg is a wonderful alternative if you wish to experiment!
  • 1 tablespoon butter Use unsalted for a more controlled flavor; coconut oil is a great dairy-free substitute.

Optional toppings

  • Whipped cream Can elevate these peaches to dessert status.
  • vanilla ice cream
  • yogurt

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cut your peaches in half and remove the pits. You can leave the skin on.
  • In a small bowl, combine the brown sugar and cinnamon.
  • Grease a baking dish with the butter, ensuring an even coating.
  • Place the peach halves cut-side up in the baking dish.
  • Generously sprinkle the cinnamon-sugar mixture over the peach halves.

Cooking

  • Place the dish in the oven and roast for 20 minutes, or until the peaches are soft and the sugar starts to caramelize.
  • Let the peaches cool for a couple of minutes before serving.

Serving

  • Serve peaches warm, optionally drizzling with cream or serving over ice cream.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. You can reheat them in the microwave for about 20 seconds or pop them back into the oven briefly to warm them through. Consider adding a splash of vanilla or almond extract for added flavor.
