Ingredients
  

For the crust

  • 1.5 cups 1 ½ cups chocolate cookie crumbs for a rich, chocolatey base.
  • cup ⅓ cup granulated sugar to add that hint of sweetness.
  • ½ cup ½ cup unsalted butter, melted to bind everything together.

For the cheesecake filling

  • 24 oz 24 oz cream cheese, softened brings the creamy texture we all adore.
  • 1 cup 1 cup granulated sugar to sweeten the mix.
  • 3 large 3 large eggs, at room temperature ensures a smooth batter.
  • 8 oz 8 oz melted dark chocolate for that luscious chocolate flavor.
  • 1 tsp 1 tsp vanilla extract adds a touch of warmth.

For the chocolate ganache

  • 1 cup 1 cup heavy cream for a velvety pourable chocolate topping.
  • 8 oz 8 oz dark chocolate, chopped for rich, deep chocolate notes.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine the chocolate cookie crumbs, sugar, and melted butter until clumps form. Press into the bottom of a springform pan to create a firm crust.
  • In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar, blending until combined.
  • Beat in the eggs, one at a time, then mix in melted chocolate and vanilla extract until smooth.
  • Pour the filling over the crust and smooth the top. Bake for 55 minutes or until the edges are set, and the center has a slight jiggle.
  • Allow to cool at room temperature, then refrigerate for at least 4 hours, preferably overnight.

Ganache Preparation

  • For the ganache, heat the heavy cream in a saucepan until just simmering, then pour it over chopped dark chocolate.
  • Let it sit for a few minutes, then stir until silky smooth.
  • Pour the ganache over the chilled cheesecake, letting it drip gently over the sides.
  • Chill for another hour to set.

Serving

  • Slice and serve, marveling at the perfectly decadent layering of chocolate.

Notes

Consider adding a hint of orange zest to the cheesecake filling or swapping out half the chocolate in the ganache for milk chocolate for a sweeter twist. For a healthier version, use Greek yogurt as a substitute for some of the cream cheese.
