Instructions
 

Preparation

  • Peel and slice the bananas into 1/2-inch thick rounds. Lay them on a parchment-lined tray and pop them in the freezer for 5-10 minutes to firm up.
  • In a small bowl, stir together the peanut butter and vanilla until smooth.

Assembly

  • Spread a small dollop of peanut butter on one banana slice and press another slice on top to make a little sandwich. Repeat until you’ve used all the slices.

Coating

  • In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until glossy and fully melted.
  • Using forks or dipping tools, coat each banana sandwich in chocolate, letting excess drip off.
  • Place back on parchment and sprinkle with flaky sea salt, chopped peanuts, or shredded coconut while the chocolate is still soft.

Setting
