Ingredients
  

For the Chicken Marinade

  • 1 pound boneless chicken thighs You can also use chicken breast.
  • 1 cup plain yogurt Greek yogurt works well.
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika For color.
  • 1 teaspoon turmeric
  • 1 teaspoon salt More to taste.
  • 1 teaspoon black pepper
  • Fresh cilantro For garnish (optional).

Preparation

  • In a large bowl, mix the yogurt, lemon juice, vegetable oil, and spices until well combined.
  • Add the chicken thighs, ensuring they are thoroughly coated. Cover and refrigerate for at least 1 hour (or overnight for deeper flavor).

Cooking

  • Preheat the grill or grilling pan over medium-high heat. A little grease will help prevent sticking.
  • Thread the marinated chicken pieces onto skewers, leaving some space between each piece for even cooking.
  • Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally until they are beautifully charred and cooked through.
  • Remove from the grill and let them rest for a few minutes. Garnish with fresh cilantro if desired.

Notes

For a dairy-free version, use almond milk yogurt. Add red chili powder for heat or toss in some bell peppers or onions on the skewer for color and crunch.
