  • 2 stalks Celery Adds crunch and flavor.
  • 1 medium Onion Flavorful base.
  • 3 cloves Garlic Aromatic ingredient.
  • 4 cups Chicken broth Consider vegetable broth for a lighter option.
  • 1 tbsp Thyme Fresh or dried.
  • 1 tbsp Rosemary Fresh or dried.
  • 2 leaves Bay leaves Remove before serving.
  • to taste Salt and pepper Enhance overall flavor.

Preparation

  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté until the vegetables soften, about 5 minutes.
  • Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  • Add the chicken thighs to the pot, season with salt and pepper, and cook until they’re golden brown, about 5-7 minutes.
  • Pour in the chicken broth and toss in the thyme, rosemary, and bay leaves. Bring to a gentle simmer.
  • Let the stew simmer for about 25 minutes, stirring occasionally.
  • If you like a thicker stew, mash a few pieces of chicken against the pot until the meat shreds.
  • Taste and adjust seasoning as necessary. Remove bay leaves and serve hot.

Notes

Feel free to include potatoes, green beans, or peas for added nutrition. A dash of red pepper flakes adds a fun kick. For a creamier stew, stir in a splash of heavy cream or coconut milk towards the end of cooking.
