  • 1 cup sour cream Greek yogurt can be substituted for a healthier option.
  • 1 can cream of mushroom soup Can opt for a low-fat version or make your own.
  • 1 cup frozen mixed vegetables Peas, carrots, corn mix well. Fresh vegetables can also be used.
  • 1 tablespoon garlic powder Fresh garlic can also elevate this dish.
  • to taste Salt and pepper Adjust based on your personal preference.
  • 1 cup shredded cheese Cheddar or a blend works great.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the cooked chicken, uncooked rice, chicken broth, sour cream, cream of mushroom soup, frozen vegetables, and garlic powder. Stir until fully combined.

Baking

  • Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • Top with shredded cheese, cover with aluminum foil, and bake for 30 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is bubbling and golden.
