Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
  • Stir in the garlic, carrots, and celery. Cook for another 5 minutes, allowing the vegetables to soften slightly.
  • Pour in the chicken broth and bring to a gentle boil. Add thyme, salt, and pepper.
  • Place the chicken breasts into the simmering broth. Cover and let them cook for about 15 minutes, or until they’re fully cooked through.
  • Once cooked, remove the chicken from the pot. Let it rest for a few minutes and then shred it with two forks. Return the shredded chicken to the pot, stirring to combine.
  • Add the egg noodles to the pot. Cook for an additional 5-7 minutes, until they are tender but still have a slight bite.
  • Taste your soup and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley if you desire.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For freezing, let the soup cool completely before transferring to freezer-safe containers (do not include noodles). Add fresh noodles when reheating to preserve their texture.
