  • 2 large flour or whole-wheat tortillas Sturdy and flexible
  • 2 cups cooked chicken, shredded or thinly sliced Rotisserie chicken works beautifully
  • 3 cups romaine lettuce, roughly chopped Crisp and cooling
  • 1/2 cup Parmesan cheese, grated Nutty and salty
  • 1/3 cup Caesar dressing Homemade or store-bought
  • 1/4 cup croutons, lightly crushed Adds irresistible crunch
  • 1 tablespoon olive oil To warm the chicken lightly if desired
  • to taste freshly ground black pepper Bright finishing touch
  • 1 squeeze of lemon Bright finishing touch

Preparation

  • If using cold cooked chicken, warm it briefly in a skillet with olive oil over medium heat for 2–3 minutes until fragrant.
  • In a bowl, combine chopped romaine, Parmesan, and Caesar dressing. Mix until every leaf is lightly coated.

Assembly

  • Lay a tortilla flat, spoon a generous handful of the dressed romaine down the center, add a layer of warm chicken, sprinkle crushed croutons, and finish with a twist of black pepper and a squeeze of lemon.
  • Fold the sides in, then roll tightly from the bottom so you have a neat cylinder. If needed, secure with a toothpick.
  • Toast the wrapped seam-side down in a hot skillet for 1–2 minutes per side until golden (optional).

Notes

Make it smoky by adding grilled red pepper or smoked paprika oil. For a vegetarian option, swap chicken for roasted chickpeas.
