  • 1 lb chicken breast, diced Use thighs for richer flavor; they’ll melt in your mouth!
  • 6 slices bacon, chopped Turkey bacon works as a lighter alternative.

Sauces and Seasonings

  • 1 cup ranch dressing
  • 1 cup heavy cream For a lighter touch, opt for half-and-half or Greek yogurt.
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Cheese and Garnish

  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Preparation

  • Begin by boiling a large pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, saving a cup of pasta water for later.
  • In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove from the skillet, leaving the drippings.

Cooking

  • In the same skillet, drizzle olive oil, then add the diced chicken. Season with salt and pepper. Sauté until golden brown and cooked through, about 6-8 minutes.
  • Lower the heat, and add the cooked pasta, bacon, ranch dressing, heavy cream, and half of the cheese to the skillet. Stir gently, adding a splash of reserved pasta water if the sauce is too thick.
  • Sprinkle the remaining cheese on top and allow it to melt into the pasta as you stir everything together. The creamy goodness will envelop each piece of pasta.
  • Top with freshly chopped parsley for a burst of color and freshness. Serve immediately.

Notes

For variations, consider adding steamed broccoli, red pepper flakes for spice, or swapping cheeses. Store leftovers in an airtight container in the fridge for up to 3 days.
