  • 8 oz elbow macaroni Substitute with whole grain or gluten-free pasta if desired.
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 6 slices bacon, cooked and crumbled Opt for turkey bacon for a leaner option.
  • 2 cups shredded cheddar cheese Blend with mozzarella and gouda for variation.
  • 1 cup ranch dressing Use Greek yogurt mixed with milk for a lighter version.
  • 1 cup milk Unsweetened almond or oat milk can be used as a dairy-free alternative.
  • 1 teaspoon garlic powder Fresh garlic can be used for a stronger flavor.
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1/2 cup breadcrumbs (optional) Panko breadcrumbs can be used for added crunch.

Instructions
 

Preparation

  • Cook elbow macaroni in a large pot of salted boiling water until al dente, approximately 8-10 minutes. Drain and set aside.
  • In a skillet, sauté crumbled bacon until crispy, then remove and set aside. In the same skillet, add shredded chicken, garlic powder, and onion powder, cooking for about 5 minutes.

Combining Ingredients

  • Preheat oven to 350°F (175°C). In a large bowl, combine macaroni, chicken, crumbled bacon, ranch dressing, and milk. Mix thoroughly.
  • Stir in 1.5 cups of shredded cheddar cheese into the mixture, reserving the remaining half cup for topping.

Baking

  • Pour the mixture into a greased 9x13 inch casserole dish. Spread evenly and top with reserved cheese and breadcrumbs if desired.
  • Bake in the preheated oven for 30-35 minutes or until the top is golden and bubbly.

Serving

  • Allow to cool for a few minutes before serving. Pairs well with a salad or steamed vegetables.

Notes

For a healthier version, use zucchini noodles instead of pasta, and opt for homemade ranch seasoning to control ingredients. Store leftovers in an airtight container for 3-4 days or freeze for longer storage.
