Preparation

  • Start by chopping your chicken into bite-sized pieces and halving the cherry tomatoes. Measure out the pesto and have your spinach ready for easy access.

Cooking the Chicken

  • In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Sauté for about 5–7 minutes, until the chicken is golden and cooked through. You’ll know it’s ready when your kitchen starts smelling incredible!

Cooking the Tortellini

  • While the chicken is cooking, bring a pot of salted water to boil. Add the tortellini and cook according to package instructions—usually 3–5 minutes. Drain and set aside, ensuring they’re al dente.

Combining Ingredients

  • Once the chicken is done, lower the heat to medium. Add the halved cherry tomatoes and baby spinach to the skillet, allowing them to soften for a couple of minutes. Then, gently fold in the pesto and cooked tortellini. Give everything a good stir, ensuring the pasta and chicken are well-coated in that luscious pesto.

Final Touches

  • Allow everything to simmer for an additional 2–3 minutes so the flavors meld beautifully. Taste and adjust seasoning as needed.

Serving

  • Remove from heat, and if desired, finish with a sprinkle of Parmesan cheese for an indulgent treat.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm it in a skillet over medium heat, adding a splash of olive oil or a bit of water to prevent dryness. Freezing portions is also an option for long-term storage.
