  • ½ cup grated Parmesan cheese Always use fresh, as it adds much more flavor!
  • 2 tablespoons unsalted butter Essential for a velvety sauce; you could omit this for a healthier option.
  • 2 cloves fresh garlic, minced For a deeper, aromatic flavor.
  • Salt and pepper to taste Enhances the dish and balances the richness.
  • Fresh parsley, chopped for garnish Adds a pop of color and freshness.

  • In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.
  • While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet over medium heat, melt 1 tablespoon of butter. Add chicken and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from pan and let it rest before slicing.
  • In the same skillet, melt the remaining tablespoon of butter and sauté the minced garlic for about a minute, just until fragrant. Pour in the heavy cream, stirring frequently, and bring to a gentle simmer.
  • Stir in the grated Parmesan cheese, and season with salt and pepper. Keep stirring until the sauce has thickened slightly.
  • Slice the rested chicken and return it to the skillet along with the cooked fettuccine. If the sauce is too thick, add a splash of reserved pasta water until you reach the desired consistency. Toss everything together to ensure the pasta and chicken are well-coated in the sauce.
  • Plate your indulgent Chicken Alfredo, and sprinkle with fresh parsley for that touch of brightness.

Notes

Consider serving with a side Caesar salad and garlic bread. For a healthier option, substitute heavy cream with Greek yogurt for a tangy twist. Add sautéed vegetables like broccoli or spinach for extra nutrition.
