Preparation

  • In a large pot over medium heat, melt the butter. Add the chopped onion and cook until soft, about 5 minutes, stirring occasionally.
  • Toss in the minced garlic and sliced mushrooms. Stir well and cook for another 7-10 minutes, until the mushrooms are browned and begin to release their juices.
  • Add the broth, bringing everything to a gentle boil. Let it simmer for 15 minutes.
  • Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, hold back some of the mushroom slices before blending and stir them back in later.
  • Pour in the heavy cream and stir until well combined. Season with salt and pepper to taste.
  • Ladle into bowls and garnish with a sprig of fresh thyme if desired.

Notes

You can swap heavy cream for half-and-half or almond milk for a lighter option. Add a splash of wine for a festive touch or cheese for extra savoriness.
