  • 4 large tortillas Whole wheat or spinach tortillas can provide a nutritional boost.
  • 1 tablespoon olive oil This adds richness and helps prevent sticking.
  • Salt and pepper To taste.

Preparation

  • Heat a skillet over medium heat. Add the sausage links and cook for 5-7 minutes until browned and fully cooked.
  • In a bowl, crack the eggs, add salt and pepper, and whisk until blended.
  • Push the cooked sausage to one side of the skillet, add olive oil to the other side, and pour the whisked eggs into the skillet. Scramble gently for 2-3 minutes.
  • Sprinkle shredded cheese over the sausage and eggs, and cover the skillet until the cheese melts.
  • Remove the mixture from heat, lay out the tortillas, divide the mixture among them, wrap tightly, and enjoy!

Notes

Tip: You can toast the wraps in the skillet for a crispy texture. Store leftovers in an airtight container in the fridge for up to 3 days or freeze individually.
